First, we steeped two kinds of dry orange peel (Spanish sweet oranges and Haitian bitter oranges) in our Tiki Rum for three weeks. After that, we redistilled the infusion, adding freshly zested organic orange peel to the still’s steam baskets to infuse even more orange character into the distilled product. From there, we added simple syrup to reach our desired proof (80 proof, 40% alcohol by volume). As always, we used entirely natural ingredients to make Valencia, never any flavor extracts or coloring. The base of the spirit is our Tiki Rum, one of the highest rated light craft rums in the country (92 points from Wine Enthusiast).
