All the Way from New York…

The Barber family farm in the Berkshires, and the original inspiration for Blue Hill restaurants—was a working dairy from the 1860s through the 1960s. Three decades later, the Barber’s refurbished the farm and brought the dairy back to life. The story of Blue Hill Farm is in many ways the story of the Blue Hill restaurants: sustaining the iconic landscape of the Northeast in pursuit of great flavor. The original Blue Hill restaurant, opened in 2000, is locatedin Greenwich Village, New York City. Hidden three steps below street level, the restaurant occupies a landmark “speakeasy” just off of Washington Square Park. In spring of 2004, Blue Hill at Stone Barns opened within the Stone Barns Center for Food and Agriculture in Pocantico Hills, New York. Sourcing from the surrounding fields and pasture, as well as other local farms, its menus highlight the abundant resources of the Hudson Valley. Launched in the spring of 2014, Barbers Spirits is the Barber family’s first commercial venture into the world of wine and spirits.
